How it started 


Growing up, olive oil was an essential. Mum would drizzle it on whatever she was cooking. On the dining table, it was always present just in case there wasn't enough. All of that olive oil came from my family's olive grove. We never bought any. 

Then, I moved abroad and had to buy olive oil from a supermarket for the first time. 

The olive oil aisle was confusing as hell. I'd stand there for ages trying to figure out which one was the real deal, always just ending up guessing. But none of them tasted anything like the one I had back home. 

I got fed up. Why was something so simple so difficult to obtain?

I'd been living in Italy for over ten years by then. I'd visited small farmers in the south. I'd tasted their oil — rich, bold, peppery, alive. 
My partner and I fell in love with it. So we bought a piece of land in Basilicata and started making our own — to share with anyone who appreciates the real thing.

And that's how CLYR started.

The process from farm-to-table

Harvest

Olives are hand-picked when they're still green and bursting with flavour.

Transport

Straight to the mill within hours. Freshness doesn't wait around.

Wash

Cleaned with water before pressing. No dirt allowed here.

Press

Cold-pressed at under 27°C to keep all the goodness.

Extract

Oil and pulp go their separate ways. What's left? Pure liquid gold.

Rest

The oil settles in tanks, so any particles sink to the bottom.

Bottle

Filtered and bottled in dark glass to lock in flavour and freshness.
