Put simply, olive oil is the pure, pressed juice of olives.
Think freshly squeezed orange juice—but from olives.
Why it matters
EVOO is packed with the good stuff your body actually wants:
- Oleic Acid: Healthy monounsaturated fat that helps lower bad cholesterol and keeps your heart happy.
- Polyphenols: Powerful antioxidants that fight inflammation and give EVOO that peppery kick you taste.
Rules to choose the best bottle

Extra Virgin
If it doesn’t say "Extra Virgin," it’s been refined and stripped of everything that makes it good. No nutrients, no flavor, no point.

Harvest date
No harvest date? They’re hiding something. Real oil is seasonal. Look for an October/November harvest for that maximum antioxidant flex.

Dark Bottle
Light and plastic are the enemies of quality. Your oil deserves a bodyguard like glass, not a clear window that lets it go stale.

Single Origin
"Made in Italy" tells you nothing. Look for the actual region or estate (e.g., Basilicata). Generic labels usually mean secret blends.
How to store it
EVOO has three mortal enemies:

To keep that bold, peppery flavour and those fabulous health benefits, treat your bottle like a vampire—it needs to live in the dark.
Pop it in a cool, dark cupboard or pantry, far away from the oven or that lovely sunny window. And don't forget to always keep that cap on tight!
